Title: Farmhouse Pumpernickel

We love this chocolate brown, robust pumpernickel with its sweet taste of molasses and raisins. On a cold winter night, cozy up in front of the fireplace with a slice of this bread, a steaming mug of your favorite soup, and a good book.

: 11/2-poundloaf 1-poundloaf

1 cup water (for 7/8 cup water (for Welbilt/Dak machines add Welbilt machine add 1 Tbsp more water) 2 tablespoons more water) 1 egg 1 egg 1 1/3 cups bread flour 2 1/2 cups bread flour 2/3 cup rye flour 1 cup rye flour 1/2 teaspoon salt 1 teaspoon salt 1 tablespoon shortening 2 tablespoons shortening 2 tablespoons molasses 3 tablespoons molasses 2 tablespoons cocoa powder 2 1/2 tablespoons cocoa powder 2 teaspoons caraway seeds 1 tablespoon caraway seeds 3 tablespoons raisins 1/4 cup raisins 2 teaspoons RED STAR 2 teaspoons RED STAR active active dry yeast for all dry yeast for all machines machines except 1 1/2-pound Panasonic/ National machines (use 4 1/2 teaspoons RED STAR active dry yeast)

Place all ingredients in bread pan and press "start".

After the baking cycle ends, remove bread from pan, place on cake rack, and allow to cool 1 hour before slicing.
